Menu for Navidad

In Peru, we celebrate Christmas at midnight, instead of the morning of the 25th. We celebrate Jesus’ birthday, praying and giving presents to the children. Then we have a huge dinner (which resembles the American Thanksgiving, turkey and all). And we close the night with fireworks. (I’m not kidding you). No Santa on sight; or stockings either (we have no chimneys anyway). We do keep the presents under the tree, but fake trees, of course. No real pine trees in Peru.

I’m finally telling my parents I’m vegan tomorrow night. I decided to do so, right before dinner, so I can answer the expected “What the hell does a vegan eat?” question with a massive show and tell: “BOOM. EVERYTHING YOU DO”. I convinced them to let me cook for Christmas by telling them I could make a “Zero Cholesterol” dinner…

I’ll be in the kitchen all day, veganizing traditional recipes and adding some new ones. This is what I’m cooking:

-          Fresh Buttery Croissants

-          Fresh Sweet Cornbread

-          Peruvian Tamales with aji amarillo and daiya cheese

-          Ensalada Rusa (which it’s potato salad’s Peruvian cousin)

-          Broccoli Gratin

-          Vegetable Roast in traditional Peruvian aji panca marinade (which it’s usually for turkey)

-          Spinach Wellington with homemade mushroom gravy

-          Sweet potato skins with pecan praline and toasted marshmallows

-          Apple Sauce (this is a staple in Peru, like cranberry sauce here)

-          Pumpkin Pie

-          Panettone (a HUGE Peruvian staple. Look it up)

-          Hot chocolate

All vegan.

All made from scratch.
